Joel dug up a sweet potato this evening, just to see how they were coming along. He was pretty sure we wouldn't have a super crop this year, just because of how everything in the garden has been. Last year we had a 5-gallon bucket full--they lasted us into February!

Oh, I'm so jealous! I really wanted to plant sweet potatoes this year but we never found any. Those look awesome!!! Enjoy some for us as well. :)

Nice!! We just had sweet potatoes for dinner tonight! The girls love em when I slice them in the food processor, sprinkle with olive oil & some salt, and bake them in the oven. Pretty easy & so good for you!
